Someone make these for me

Gobble Gobble Meatballs
Makes about 2 dozen 1.5" meatballs

Ingredients
2 Tablespoons olive oil
2 pounds ground turkey
2 cups garlic croutons or stuffing cubes
1 cup dried cranberries
2 large eggs
1/4 cup bread crumbs
2 Tablespoons chopped fresh sage
2 teaspoons salt
1 pinch of ground cinnamon
Preheat oven to 450 degrees F. Drizzle the olive oil into a 9 X 13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.

Combine ground turkey, croutons, cranberries, eggs, bread, crumbs, sage, salt, and cinnamon in a large mixing bowl and mix by hand until thoroughly incorporated. Roll the mixture into round, golf ball-size meatballs (about one and a half inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another.

Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165 degrees F.

Allow the meatballs to cool for 5 minutes in the baking dish before serving.

I can't believe this $#*@!

couple of weeks ago, I tried to make poundcake muffins. I just halved MD's recipe.

They had major sinkholes and tasted like cornbread.

I used "I can't believe it's not butter!" even though the recipe called for butter.

I did it for my health, you know?

Anyway, I've been craving some of my from scratch brownies. I decided to use the rest of the effing sinkhole maker "I can't believe it's not butter!"

Ummm, now I know what cause the poundcake to sink like that.

I haven't yet tasted the brownies. They're normally good even if I take them out too early. I left them in 5 minutes longer today.

*sigh*

I don't even know if I want to waste the time it takes to make the icing if they EFFING SUCK like I am anticipating.

And I only have one egg left. Not enough to make a new batch.

I hate this.

If worse comes to worst, I will fill the sinkholes with Marshmallow Creme (I got it for "The Boy").

**Update** - They taste good. No mallow creme or icing needed. They're just extra crispy. Like a cookie. So I suppose I'm thankful that they don't taste like chocolate cornbread...

MD gave me some sneakers!


T

hat's "Trainers" for you Brits. ;-)

First, MD's 2 obsessions are Sneakers and Jewelry. She likes gold, but every once in a while she decides to buy something silver and I usually end up getting it. Fine with me!

Second, she has more shoes than she can wear in 3 months without repeating a pair. Usually, if she buys a pair and doesn't like them she just sends them back.

The thing you need to know is that MD had discovered that flat shoes make her back hurt, so she always needs a little heel. But she bought these:



I told her when she came over that they looked too flat for her. She said she was going to put some inserts into the shoe which would raise the heel on the inside.

I still tried them on (she wears a 10, technically I wear an 8.5 but a 9 feels so good that I usually buy a 10). They had only half an inch of space between my toe and the end of the shoe, so I don't know how her feet were feeling in them.

BUT ANYWAY

She came over the other day with the shoes and told me that I could have them.

Wheeeeeeeee!

Really, there are times when my feet/legs swell so having a pair of her ginormous generously sized shoes around is convenient so that I don't have to go to Wal-Mart in slippers.

Whatever.

Guess what I'm cooking today?

Cheesesteak Soup. I've never tried it before. I know it smells delicious. I'll let you know how it turns out.

**UPDATE** - The first bite was awesome. The second - 10th bites were good. It got less awesome with each bite. I think I'll try cheddar cheese next time. The American cheese gave it an odd taste, IMO.

The Boy has been asking me to make some Peanut Butter Muffins for weeks. But the upper part of my left butt cheek is hurting so I really don't feel like standing for that long.

But they are delicious. Here's the recipe:

1/2 Cup Peanut Butter
1/2 Cup Butter
1 1/2 Cups Sugar
2 Eggs
1 tsp vanilla
1 Cup Flour

Bake at 350° for 25 minutes

You can bake it in a pan, but I find it better (healthier) for us to bake it in a muffin pan so that I can restrict myself The Boy to 1 per day. Also, I usually add half a bag of peanut butter chips to the batter.

MD is home!!!


I

just checked my voice mail about an hour ago. She had called & left a message.

Apparently, when I told Bro that Least Favorite Uncle told me that she was still at the hospital, he was thinking "Why the hell would she ask him where she was? Why not Omah or Favorite Uncle?" That's why he was looking at me like I had 2 heads.

She had chest pains & they wanted to make sure she didn't have any blockages. She didn't.

I told her that we had come over Thursday to tell her that we were going to cook the Bacon Cheeseburger meatloaf for her. She said we could do it tomorrow. I said "It's already in the oven, but we'll bring you some Teriyaki Ribs tomorrow after Evan's band concert."

The meatloaf was sooooooooo goooooooood. The recipe calls for 1 lb of meat, but with 8 oz of cheese & all the other crap it seemed like it would be too much for that little bit of beef. So I used 2 lbs. We will have meatloaf samiches for days to come, LOL. The french fried onions on top really made it beyond belief. And we had mashed REAL potatoes.

Evan said that he hadn't expected them to be that good...

He has apparently forgotten that I always "put my foot in it" when I cook! But then I don't cook a lot these days.

He did most of the cooking.

BTW, DinometerDeb asked if it happened around here that someone shot themselves at Wal-Mart. It didn't happen in Chattanooga, but close enough. Here's the news story about it. From WRCB TV.


A busy shopping day turned chaotic in SomeTown, Tennessee Friday. Around Noon Central time, Sometown Police say a 19 year old man walked into Wal-Mart, purchased a .22 caliber rifle and three boxes of ammunition, then shot himself in the parking lot.

After looking at security camera video, police say he sat in the vehicle for a few minutes, then got out, walked a few feet away and collapsed. One eyewitness working nearby said the scene was a frightening one, but she's most worried about what could have happened.

"It really did scare me because he could have got angry and shot up the whole area," said eyewitness N---- W----. "That could have been dangerous for a lot of people."

So, tomorrow I get to go to hear Evan's last band concert of this school year. Yay.

Do I sound excited?

MD said she didn't feel like coming with us. I'd just better remember to bring my ear plugs. When he was in elementary school they had a Christmas concert every year. With frigging bells. Those bells felt like ice picks being stabbed into my ears so I always left the building until that part of the concert was over.

I don't know how good (or bad) this concert will be. I really don't want to go, LOL.

*Sigh*

Just one of the joyful duties of motherhood, I reckon.
